Mango Muffins
MAKeS 12 MuFFInS
1/2 cup coconut flour, sifted 1/2 tsp. sea salt
1/2 tsp. baking soda
6 organic eggs
1/3 cup grade B real maple syrup (check the label) 1/3 cup coconut oil
1 tsp. vanilla extract
1 cup diced mango, fresh or frozen
Heat oven to 350°F and line a muffin tin with paper liners. In a small bowl, combine coconut flour, salt, and baking soda. In a large bowl, combine eggs, maple syrup, coconut oil, and vanilla. Blend well with a hand mixer. Mix dry ingredients into wet; blend well. Gently fold in mango. Spoon batter into muffin cups. Bake for 20 to 25 minutes. Cool and serve.
Mango Ginger Smoothie Serves 2
2 cups diced celery
1 diced cucumber, (about 2 cups)
1-inch chunk ginger (about the size of your thumb tip), grated
11⁄2 cups water or coconut water
2 cups parsley, loosely packed
2 cups frozen mango
1 lemon, peeled
1 tbsp. local, organic honey
Lemon to taste (use the juice of one for a real citrus boost)
Place celery, cucumber, and gin-ger in a juicer. Then combine the juice with all other ingredients in a blender. Mix until smooth.
Quinoa Bowl
Serves 1
1/2 cup quinoa (find it in the grain aisle)
2 tbsp. almond milk (or coconut milk)
1 tbsp. almond butter
1 tsp. grade B real maple syrup or organic honey (check the label)
1/2 banana, sliced (or your fave fruit; strawberries, blueberries, blackberries, mangoes or raspberries are all great)
Optional: cinnamon to taste, a handful of nuts — I love walnuts and almonds!
Take cooked quinoa, milk, almond butter, and maple syrup in a small saucepan. Reheat on medium-low, stirring, so the quinoa doesn’t stick. When the mix- ture is warm (it should only take a few minutes), scoop it into a bowl and add the fruit and nuts.
Chia Seed Pudding in a Papaya Bowl Serves 2
1/4 cup chia seeds
1 cup almond milk (or coconut milk)
1 ripe papaya
1 tsp. grade B real maple syrup or organic honey (check the label)
1/2 lime
Optional: fresh fruit on top, or a handful of nuts
Cut 1 ripe papaya in half, scoop out seeds. Take chia seed pudding, scoop it into your papaya bowl and add the fruit and nuts. Squeeze fresh lime to taste
